Cooling

Cooling freshly drawn milk is a fundamental process that preserves milk quality.

Its aim is to stop the proliferation of milk bacteria and to reduce fat and protein alterations.

Freshly drawn milk must be brought to a temperature between 4-6 degrees C, at which it can be stored until collection.
The refrigerator should be chosen according to the cost, efficiency and quantity of milk produced.
